Pasta alla Puttanesca
"Whore's Pasta"
A robust pasta dish originating in Naples, Italy.
All natural ingredients in a delicious combination of flavors, aroma and great visual appeal.
Ingredients;
3 - tomatoes, chopped
1 - onion, minced
3 - cloves garlic, minced
1 - red chili pepper, remove seeds and mince
2 - tsp. capers, rinsed and drained
8 - pitted black olives, quartered
4 - anchovy fillets, chopped
3 - Tbl. extra virgin olive oil
1/2 - tsp. sea salt
1/4 - tsp. freshly ground black pepper
1 - Tbl. finely chopped fresh flat-leaf parsley
7 oz. (200g) - spaghetti
Preparation:
Lightly sautee onions in 2 Tbl. of the olive oil. Add anchovies and garlic, stirring to break up anchovies.
Add the, capers, chili pepper, olives, tomatoes and bring to the boil. Blend in salt and pepper.
Reduce heat and simmer uncovered, for 10 minutes. Stir frequently.
Cook the pasta.
Drain the pasta and add to the sauce.
Toss the hot pasta, parsley and the reserved tablespoon of olive oil.
A delicious way to vary the basic weight loss food is to add a can of tuna or salmon when you blend the pasta and sauce.
