Grilled Shrimp with Vinaigrette Marinade
Mediterranean Shrimp Salad
The flavor of the shrimp is enhanced by the vinaigrette marinade/ dressing.
Ingredients:
Vinaigrette;
3/4 - cup extra virgin olive oil
1 - Tbl. lime juice
1 - tsp. Dijon mustard
2 - tsp. minced garlic
1/4 - cup red wine vinegar
Salad;
1 - pound large shrimp, de-veined
2 - zucchini
1 - bunch of asparagus
1 - avocado, diced
2 - Tbl. fresh basil, chopped
2 - pounds of salad mixture (butter lettuce, endive, iceberg, radicchio, romaine, etc.)
Preparations:
Combine first five ingredients and marinate the shrimp in one half of the vinaigrette for 1/2 hour. Place the shrimp on skewers when ready.
Clean the asparagus. Slice the zucchini lengthwise.
Place the shrimp, zucchini and asparagus on the grill, and cook until done.
Chop the grilled vegetables into bite-sized pieces.
Put the greens in a bowl, add avocado, grilled veggies and shrimp. Drizzle with the remaining vinaigrette.
