Green Goddess Salad Dressing
“The Green Goddess” was the most popular play of the 1920-21 season on Broadway. George Arliss, as the Raja of Rukh, was the star of the hit play. He was residing at the grand, Palace Hotel in San Francisco when the executive chef, Philip Roemer, concocted a special salad dressing recipe to honor their celestial resident. The chef based this new salad dressing on the ‘Sauce au Vert’ from the table of French king Louie XIII.
Here is a healthy version of The Green Goddess dressing that is tasty enough for a king;
Ingredients:
- 2 cups - yogurt, plain
- 1 cup - scallions, green and white, chopped
- 1/4 cup - basil, chopped
- 1/4 cup parsley, chopped
- 2 tsp - chives, chopped
- 2 tsp - tarragon, chopped
- 2 tsp - anchovy paste (or substitute 1 tsp of Worcestershire sauce)
- 1 tsp - sea salt
- 1 tsp - black pepper, coarse ground
- 1 - lemon, juiced
Russian Salad Dressing Recipes
Yes, there is more than one recipe for Russian Salad Dressing. I have at least a dozen ‘genuine’ recipes myself. The very first versions from the late 1800’s feature caviar (hence the name). That iconic ingredient was gradually dropped from most of these salad dressings during the 1920’s.
This is a diet-conscious blend of the most flavorful offerings from many Russian salad dressing recipes.
Ingredients:
- 1 cup - yogurt, plain
- 1/4 cup - Olive oil
- 1/4 cup - tomato paste
- 1 clove - garlic, minced
- 1 Tbl - caviar
- 1 tsp - chili powder
- 1/2 tsp - sea salt
- 1/2 tsp - black pepper, coarse ground
- Anchovies
- Bell peppers, minced
- Celery, minced
- Cream, heavy
- Honey
- Horseradish
- Mustard, dry or Dijon
- Onion, grated
- Orange juice
- Paprika
- Parsley
- Worcestershire sauce
Thousand Island Salad Dressing
This creamy salad dressing was a feature of ‘shore picnics’ after guided fishing tours in the Thousand Islands region. It passed through a number of illustrious hands before this northern version of a Louisiana salad dressing was presented to the world by Oscar of the Waldorf.
Oscar Tschirky is famous for the fruity Waldorf Salad but it was Sophia Lalonde that originated this popular variant of a Russian dressing.
Ingredients:
- 1 quart - yogurt, plain
- 3/4 cup - sweet pickle relish
- 1/2 cup - black olives, chopped
- 1/2 cup - red bell pepper, chopped
- 1/4 cup - vinegar
- 1/4 cup - Worcestershire sauce
- 3 - eggs, hard-boiled
Weight Loss Salad Dressings
A suitable substitute for the yogurt in these creamy salad dressing recipes is a low fat (non-fat) mayonnaise or sour cream (or both). This will vary the flavor and texture for even more of a treat to your pallet.
