Chicken Morocco


Broiled chicken breasts, with an orange-flavored spicy coating, sliced and served on a bed of couscous that has been flavored with sautéed red onions and zucchini.

An easy to make and delicious chicken recipe.

Ingredients:

4 - boneless chicken breasts, skinned
3 - Tbl. orange juice
2 - Tbl. paprika
2 - tsp ground cinnamon
1/2 - tsp cayenne pepper
1/2 - tsp Salt

1 - Tbl. extra-virgin olive oil
1 - medium zucchini, cubed
1 - medium red onion, chopped

1 - 3/4 cup low-sodium chicken broth
2 - Tbl. minced fresh parsley leaves
1 - cup whole-wheat couscous

Preparation:

Pre-heat broiler.

Combine orange juice, paprika, cinnamon, cayenne, and 1/4 tsp salt in small bowl.  Rub spice paste onto chicken breasts, coating both sides.

Place chicken on small baking sheet that has been oiled lightly with small portion of olive oil.  Chill for 10 minutes while preparing couscous.

Saute zucchini, onion, and 1/4 teaspoon salt until vegetables are lightly browned

Add broth and parsley and bring to a boil.  Stir in couscous, remove pan from heat, cover and set aside for 5 minutes.  Fluff couscous with fork, cover.

Place baking sheet with chicken under broiler.  Broil chicken on both sides until cooked through (about 10 minutes).

To serve - make bed of couscous on each plate.  Slice chicken and arrange on couscous.  Garnish.  Serves 4.
